新☆生涯学習講座「大高酵素で酵素味噌作り」のリハを行いました。

お料理講座第1回目として「大高酵素で酵素味噌作り」を開催するにあたり、味噌作りのリハを行いました。
大豆も麹も福岡県福智町産!!
①大豆とふげんを加えた水に30時間浸す→3倍位の大きさに
②圧力鍋で大豆を煮る→弱火で10分、火を止め10分程度 (早い！^_^)
③大豆をミンチ機でつぶす
④潰した大豆を塩と麹とふげんと大高酵素を入れて、こねこね混ぜる
⑤味噌玉(大きなボール状)にする
⑥出来上がった味噌玉を容器に入れて保管→3～4か月間寝かせる
ふげんは、粉ミルクみたいに目の細かい小麦粉のような万能粉
どんなお料理にも使えるようです。
意外に工程は簡単です。数か月後、美味しいお味噌ができますように・・・
3月23日の開催日には出来上がった酵素味噌の試食をして頂き、その味噌を使って
一品料理もします・・・楽しみです♪
